The best recipes are made with top ingredients which require little embellishment. We love to slice ripe tomatoes then add some mozzarella or feta cheese, fresh basil leaves, a few sliced red onions then the all-important drizzle of really great olive oil. A couple of tips: always serve them at room temperature as the fridge dulls their flavour and as the tomatoes are acidic enough you don’t need to add vinegar or lemon juice, just a sprinkle of sea salt.
There are endless ingredients and twists you can add to a potato salad, but do remember to add the dressing while the potatoes are still warm so they absorb all the flavours. Try this salad with a simple oil and vinegar dressing or go for something more Scandinavian in mood with beetroot and a lighter creamy dressing, rather than the classic mayo. Always add something sharp and acidic to your potatoes such as spring onions, capers or gherkins.
Sizzling Thai prawn salad
Noodles are a great addition to any Asian-style salad and will make the ingredients go further. In this Thai salad , griddled prawns are served with crunchy vegetables tossed in an easy peanut dressing – it just begs for some blanched rice noodles to be added so you can serve it as a main dish. This would also work with strips of stir-fried chicken or pork. You could add fried tofu instead for the vegetarians at the table.
